Chocolate Peanut Butter Crispies

The other day I decided to jazz up the standard rice crispy treat recipe with some peanut butter and dark chocolate. The results were pure yum and disappeared exceedingly quickly.

Ingredients

  • 8 cups rice crispy cereal
  • 1 stick butter
  • 1/2 cup  creamy peanut butter
  • 5 cups mini marshmallows
  • Dark chocolate to drizzle on the top

Melt butter in the microwave in a medium sized bowl.  Add peanut butter and marshmallows and continue to heat in microwave about 4-5 minutes, stirring every couple minutes, until marshmallows are fully melted, and  ingredients are completely combined.

Measure rice crispy cereal into a large bowl.  Pour peanut butter/marshmallow mixture over the rice crispy cereal and stir til well combined.  Press into a buttered 9×12 pan.  Refrigerate.

Melt dark or semi-sweet chocolate in a double boiler until liquid.  Drizzle over the top of the cereal bars.  Chill until chocolate is set.  Enjoy!

    Add a teaspoon or so of coconut extract – it tastes amazing.
