The soup turned out great– we loved it! Next time I will try it with coconut milk instead of evaporated milk because I bet that would be really yummy too.

So, let’s say I have some cooked turkey and some broth made from that carcass and would like to try that soup. Any idea of general proportions of broth and meat? I don’t think I’ve ever just boiled one like this.

I’d probably like to have at least a cup or two of chopped turkey to go with 8 cups of broth. If you don’t have that much broth, just use chicken bouillon cubes and water to fill it out. But soup is super forgiving– don’t be afraid to just try something, and then add a bit more broth if it looks too thick, or a few more veggies if it looks too watery. It’s just about impossible to ruin soup.
