Last two cookbooks to give away!
Though I will be glad to take a break from writing giveaway posts, it has been fun to announce winners and hear from folks excited about receiving their loot.

Tomorrow I will be telling you about prizes for the September fitness challenge– how’ve you all been doing??? But today I have two more cookbooks to give away.
The first is the Entenmann’s Big Book of Baking
. The first part of the book consists of ‘almost-homemade’ recipes — recipes that call for store-bought Entenmann’s goodies as some of the main ingredients. I don’t typically go for that type of cooking– in fact, if you’ve read my cookbook, you know I am much more likely to be interested in recipes that call for very simple ingredients. So as I thumbed through the early part of this book, I was beginning to doubt I’d like it.
But once past the ‘Almost-Homemade’ chapter, I found myself squarely in my cookbook happy zone: real do-able recipes and yummy-looking pictures that had me ready to head for the kitchen. Confession: thanks to all these September giveaways I am in cookbook-overload right now and haven’t actually tried any of these recipes. But two I have bookmarked are the Chocolate Chiffon Tart and the Banana Cranberry Loaf Cake.
The second cookbook I’m giving away today is Mexican Made Easy by Marcella Valladolid. This cookbook features quick recipes using lots of simple ingredients. Side note– somehow in becoming a photographer I have become a food-photography snob and get sooo turned off by less-than-lovely photography in cookbooks. No worries here: the photos are gorgeous. Recipes I am looking forward to trying include:
- Chicken Flautas– they look so easy!
- Yukon Potato, Poblano and Corn Gratin
- Mexican Chocolate Bread Pudding– yum!

We’re having oven roast with carrots and potatoes. I also have corn on the cob. My homemade spaghetti sauce last night was to-die-for!! Leftover spagetti for lunch today. Kids didn’t even notice the ground turkey, zucchini and other veggies I loaded it down with in addition to my regular recipe!
Tonight is “mystery bean” soup (basically, all the dried beans leftover in the cabinet) with homemade bread (with sprouts in it) from the bread machine!
We’re having hotdogs for dinner – we’re very excited as we both love hotdogs and we don’t have them very often.
Tonight we are having pizza for the kiddos and calzones for the Momma and Poppa. Saturday night is our pizza night, but we are going to be gone tomorrow night and we were gone last Saturday night too. I love stuffing my calzone with sauteed onions, goat cheese, mozz/provolone cheese, grilled chicken, and diced tomatoes. Yum!! In my husband’s calzone: ham, banana peppers, sauteed onions and diced tomatoes. Just pepperoni pizza for the kiddos. I’m getting hungry just thinking about it all!
I’m making lasagna tonight.
I’m making pineapple chicken and rice casserole–it has garlic, cheddar, and coconut!
The kids are making burritos because we’re going out on a date with friends- yippee!
I’m still not sure what I’m making for dinner tonight but we went out last night and had mexican! yum!
I plan on making chicken lasanga florentine (from your book)with peaches as dessert and last night we had lime chicken tacos (this has lime, salsa, and corn it it and add cheddar cheese and sour cream on top) with an apple to munch on afterwards.
I am not sure I am going to cook tonight. Last night we had lemon rice with chicken and thyme (made in the rice cooker!) with a green salad.
After the Murphy’s Law of dinner making last night and a trip to Carl’s Jr, 15 minutes before my youngest’s bedtime, we are having the meatloaf tonight, that was supposed to be for last night.
I have a pot roast cooking in the slow cooker! Smells good! Last night we had Chicken cooked in red wine with Almond rice pilaf.

We had chicken tortilla casserole. I’d love to win the Mexican Made Easy cookbook as we love Mexican food!
I would love the Mexican cookbook! Last night was leftover chicken and mushroom stuff that you posted recently. Grandma’s Chicken or something you called it. Tonight we’re cheating and ordered a pizza since we were out late watching Courageous. I recommend it, by the way. I think you and John would enjoy it.
