Last two cookbooks to give away!
Though I will be glad to take a break from writing giveaway posts, it has been fun to announce winners and hear from folks excited about receiving their loot.

Tomorrow I will be telling you about prizes for the September fitness challenge– how’ve you all been doing??? But today I have two more cookbooks to give away.
The first is the Entenmann’s Big Book of Baking
. The first part of the book consists of ‘almost-homemade’ recipes — recipes that call for store-bought Entenmann’s goodies as some of the main ingredients. I don’t typically go for that type of cooking– in fact, if you’ve read my cookbook, you know I am much more likely to be interested in recipes that call for very simple ingredients. So as I thumbed through the early part of this book, I was beginning to doubt I’d like it.
But once past the ‘Almost-Homemade’ chapter, I found myself squarely in my cookbook happy zone: real do-able recipes and yummy-looking pictures that had me ready to head for the kitchen. Confession: thanks to all these September giveaways I am in cookbook-overload right now and haven’t actually tried any of these recipes. But two I have bookmarked are the Chocolate Chiffon Tart and the Banana Cranberry Loaf Cake.
The second cookbook I’m giving away today is Mexican Made Easy by Marcella Valladolid. This cookbook features quick recipes using lots of simple ingredients. Side note– somehow in becoming a photographer I have become a food-photography snob and get sooo turned off by less-than-lovely photography in cookbooks. No worries here: the photos are gorgeous. Recipes I am looking forward to trying include:
- Chicken Flautas– they look so easy!
- Yukon Potato, Poblano and Corn Gratin
- Mexican Chocolate Bread Pudding– yum!

Been under the weather the last couple of days, so DH has been stopping to buy fast food on the way home.
I’m not cooking tonight but made pizza last night.
We’re having baked chicken chimichangas or chicken taco salad. I saw another review of Mexican Made Easy and I would love to receive it.
Fish sticks (!) and homemade sweet potato fries
We are having pork chops and corn on the cob from our garden.
We’re having spaghetti and salad today!
We are under the weather, so I made a huge batch of soup last night for tonight too – feel better that it is homemade with our own broth and tomato sauce! Side of homemade bread too.
We’re having chicken tikka masala, and roasted zucchini and mushrooms.
We are having “brinner” (breakfast for dinner). Baked oatmeal in the slow cooker, served up with fresh fruit and scrambled eggs. Healthy, frugal, delish, and a kid-favorite… what’s not to love?
Didn’t actually do the cooking myself (bedrest, sigh) but the idea was mine:)
Spaghetti and meat sauce last night which will have to do as leftovers tonight. Too many kids sports!
We are having Spaghetti tonight. The other night we had Honey Chicken Stir Fry, and it was SO good…recipes on allrecipes.com. We also tried BBQ Chicken Calzones last night…recipe on pillsbury.com. It was pretty good also.
Mary, I recently bought your cookbook. I’ve been reading it and trying to get tips for lowering our grocery budget. I made your homemade pizza recipe, and everyone loved it. Thanks!
We’re having spaghetti and salad here-it’s my “go to” dinner when I don’t have a better plan. I’ve been a little off on my meal planning lately-hopefully I can use the weekend to get back on track!
Last night we had stuffed shells. Tonight it will be pork chops w/rib rub – on the grill, and mashed potatoes.

Dinner tonight is “Breakfast for Dinner!” Pancakes & eggs!
We are studying geography this year and the children are cooking on Thursdays from the country they are studying. We started with the U.S. and have enjoyed Connecticut Clam Chowder and Delaware Pumpkin Pie last week and tonight, had Texas Chili and Washington Apple Pie–Yum! Next week, we are “headed” for Mexico!!

It was supposed to be grilled chicken, but we ended up with some unexpected nasty weather so that didn’t happen – a frozen pizza instead. Lunch though was homemade french onion soup with homemade crouton toppers, mmmm…
We had a tea party of sorts for supper with cucumber and cream cheese sandwiches on tiny size breads, strawberries served with melted chocolate, spaghetti squash, and tea to drink. We wore dresses, long gloves, and hats and served everything on china with lights down low.
We had baked parmesan fish, steamed spinach, the sweetest corn on the cob we’ve had this season, and applesauce from apples on my mom’s apple tree! It was yummy, but I think I’d rather have been at the tea party of the commenter above
Nothing too much because the two of us had a larger lunch than usual. When this happens I make mac and cheese with Canadian bacon in it and a little peas.
We had Apple Chicken, mashed cauliflower, steamed green beans, and quinoa.
tonight was soup and grilled cheese…. totally out of inspiration for the week >>>LOL Last night we had spagetti casserole
I love talking food too! Tonight was homemade chicken noodle soup; so healthy and not difficult and perfect for a cool rainy night.
Pork ribs, carrots, and pasta.
My son had hand surgery today so I made chicken noodle soup. He needed something light on his stomach so that he could take his pain meds. He wanted angel food cake with milk. So, that was dessert!
I made cheese buns with eggs and veggies.
We had pasta tonight–I needed something fast and easy.
I made brisket and potato skins for dinner tonight. Yum! The Mexican cookbook sounds great!
Tonight we had barbecued chicken wings, spring mix salad with cucumbers, onions and ranch dressing, and peas. A very easy dinner after a bust homeschooling day

Chicken enchiladas with homemade tortillas. It was so awesome
We had my Dad’s famous Tuna a la Renzo! Basically half an English muffin topped with tuna salad,a slice of tomato and a slice of cheese. Then toast until warm and cheese melted. Delicious. Kids loved it.
Didn’t cook tonight but last night’s dinner was awesome! I love, love, love Thai food but since it’s spicy, I try to save my family’s taste buds and not make spicy things so often. However, this recipe I couldn’t resist. Broiled tilapia with curry sauce over top with plenty of fresh veggies and cilantro. Oh it was so good! I used red curry paste and though it had a little heat, not too bad even for my smallest. Definitely a dish we will do again. Hubby loved it and requested it with chicken or beef.
Lasagna…it’s one of my fave comfort foods.

Tacos.
Ooh! I want the Mexican one! I am happy to be back in the land of easily-available faux-Mexican food, cuz when we were overseas I had to make my own tortillas and while I did get good at them, they took a long time.
Tonight we had tacos. We buy corn tortillas and deep fry them, and I saute chicken breast cubes in a green sauce and they’re very tasty, and then I put out a million bowls full of things like chopped cilantro and grated cheese and home made guacamole (also learned to make in Morocco) and salsa (happily not homemade!), etc. It’s a fun meal and we do it for guests and everyone loves it and this post is too long.
Chicken cordon bleu casserole and rice.
Spinach quiche (crustless) and roasted sweet potatoes.
Last night was wild rice, stuffed bell peppers, eggplant casserole, okra and deviled eggs, watermelon for dessert.
I made cabbage soup, honey oatmeal bread and an apple crisp. We shared with some friends who just had a baby
I think we will have Mexican soup with biscuits. Getting chilly at night and love a meal like this.
Tonight is black beans and rice night with cornbread and a salad. Yum! It looks like I could use Marcella book for a little inspiration, huh?
Our power was going on and off because of high winds so we stuck to sandwiches for dinner. Tonight is homemade buffalo chicken salad.
Last night I put a birds eye bag of frozen rice topped with some seasoned polluck in a foil pouch and baked it. It was delish! Thanks for the giveaway!

We’ve had meals brought to us this past week by our church family and friends because of a difficult trial we’ve been through, and tonight, as sweet gal is bringing pizzas!
We went to the Cheesecake Factory for dinner last in celebration of my daughter’s 1st birthday.
I’d love the Mexican cookbook.
