Homemade Eggnog

December 23, 2009

This time of year in the grocery store I’m often tempted by eggnog, but it’s so darned expensive! Here’s an easy way to make your own.

Prep time: 10 minutes, plus time for chilling
Makes: 1/2 gallon

1 3-ounce package instant French vanilla pudding mix
1/2 gallon milk (2% or whole is best)
1/2 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Whisk together puddling mix and about 1 cup of milk. Combine sugar, cinnamon, and nutmeg in a small bowl. When the puddling is blended and dissolved, add sugar, vanilla, and spices to the pudding/milk mixture. Pour into a 2-quart pitcher, add remaining milk, and stir well. Let chill overnight, or at least one hour. Just before serving, stir again to recombine spices.

Thanks for sharing homemade eggnog! Christmas is only the time I make eggnog because I find it too expensive. I only make it for special occasions.

That sounds yummy- I’ll try that next time! This is the recipe I usually use:

    1 can sweetened condensed milk
    2 raw eggs (optional)
    1/4 tsp. salt
    1 tsp vanilla
    Mix well

    add: 4 cups milk (I use 6)

whip until peaks form and fold in: 1 cup heavy cream

    top with grated nutmeg

I generally make it in the blender.

I made this a few weeks ago from your cookbook and my husband said that he likes it better than store bought egg nog. Thanks for a great recipe. It was delicious!

This sounds yummy! I’m not a fan of eggnog but my kids love it — yours sounds like a recipe even I would like!

Your recipe looks very yummy, but for those who prefer all-natural ingredients, here is a recipe I tried a few weeks ago for homemade cooked egg nog. It’s so good…I even drank some of it hot, which was great, and it thickens up a lot in the fridge when you chill it.

    Homemade (Cooked) Egg Nog

-6 egg yolks (do not use whole egg)
    -1/4 cup sugar
    -1/4 tsp salt
    -1 quart milk
    -1 tsp vanilla
    -1/4 tsp nutmeg (optional)
    -1/4 tsp cinnamon (optional)

PREPARATION: Beat eggs, sugar and salt together in a mixing bowl. Whisk in the milk. Cook mixture over a double boiler whisking occasionally. When it is fairly thick and thinly coats a spoon, remove from heat. Remove from heat and mix in the vanilla, nutmeg, and cinnamon.

Made this using Fat-Free Milk Sugar Free Pudding and Splenda as substitutes…It was great my family loved it. Egg Nog even the light has tons of sugar and fat and with a diabetic hubby he usually has to miss out…not this year and it was so cheap and easy to make

I made this last night and like it better than the store bought eggnog. My eggnog loving sons won’t be home until later, I am excited to try it out on them. I may not tell them how to make it though since we might start going through milk faster than when I forget the last time and buy chocolate syrup again. :P
