If I get concerned that my onions might go bad then I dice them up, spread them on cookie sheets and flash freeze. Then I take them all and put them in ziploc freezer bags. Then when a recipe calls for 1/2 cup of diced onion, there you go.
It is great for when I need to throw a meal together fast.

I didn’t know wrapping onions in newspaper would keep them longer… where do you keep them once they are wrapped???
We have been drying apples all week. I’m thinking about freezing some onion too (like Tracy does). Right now, they are just sitting in my garage, and will most likely freeze in there if I don’t get to them in the next couple of days.
I am jealous. I would love apples to put up.
We just keep the onions in the garage. We routinely have onions that last through February, and this year some lasted all the way til April!

Hmm.. We have some gleaned onions, we’ll have to try the newspaper trick. We got tons (6 laundry baskets full) of gleaned potatoes we were boxing up last night. We need to find a colder spot to store everything though.
Just wondering… does the “wrapping in newspaper” thing work for apples too? I have a friend whose husband bought 175# of apples and she doesn’t have time to spend the week canning.
