Almond Oat Bread

Makes: 2 loaves

This bread is slightly sweet and is wonderful eaten plain or toasted.

Ingredients
1 tablespoon yeast
1/4 cup warm water
2 cups boiling water
1 cup quick oats
2 tablespoons shortening, melted
3/4 cup sugar
1 teaspoon salt
3/4 cup sliced or slivered almonds
4-1/2 to 5 cups all-purpose or bread flour

Directions
Dissolve yeast in 1/4 cup of warm water in a small bowl. In a large bowl pour boiling water over quick oats. Add melted shortening, yeast mixture, sugar, salt, and almonds. Add 4-1/2 cups of flour. Knead for 2-3 minutes, adding a little more flour if dough is sticky. Let rise til double in bulk, about 1 hour. Knead for another 2-3 minutes on a floured surface. Form into two loaves. Set into greased loaf pans and brush with melted butter. Bake at 325 degrees for 40-50 minutes. Remove from pans and let cool on a rack.

    I was thinking of making yeast bread today. If my daughter is us to kneading, I may have to try this. I’ll let you know when I do.

    We made it. It’s very tasty. I didn’t expect it to be quite as sweet as it turned out. Mine also didn’t rise over the top of the pan … maybe you have smaller loaf pans than I do. In any case, it will make for a yummy breakfast!
