Faith, I let the cream cheese sit out a couple hours. Our mixer is broken so we did it by hand. And I just blopped the topping over the cake in spoonfuls– it was messy but turned out fine.

Mary – I have three questions about the black bottom cake. 1) Do you use the mixer for each the cake batter or the topping; 2) should you let the cream cheese soften; 3) if not, how the heckle and jeckle do you spread the topping on the batter before putting in the oven? I tried the cake. It was good despite the fact that I am culinarily (is that a word?) challenged. Any help you can provide would be greatly appreciated!

Make the black bottomed cake – and use cold leftover coffee instead of water in the cake. You’ll love me for telling you this very old cook’s hint (yes I’m old and yes it is an old hint) anytime you are making something chocolate and it calls for water – use the coffee trick instead and it gives more complexity and a lot of YUMMMOOO to your chocolate (isn’t that called gilding the lily – I mean chocolate and MORE good flavor – shame on me). Luv the Sugar Scrub….I’m always looking for home beauty stuff. I’ve done bath salts before using mason jars and epsom salts with essential oils….

I’ll have to try this at home and see if it works as well for me. Thanks for sharing.
